Makes: 3 cups



  • 2 cups sliced cucumber chilled, diced small pieces
  • 1-1/2 cup fresh raspberries, chilled


  • 2 tablespoons seedless raspberry spread (Crofter’s Premium Spread)
  • 1-1/2 tablespoons lemon extra virgin olive oil (Maison Orphee)
  • 2 teaspoon fresh mint + more for garnish

  1. Mix the dressing in a small bowl or a tightly sealed mason jar. Stir/shake well until all combined.
  2. Assemble the salad. In a large bowl, add cucumbers and raspberries. Drizzle with the dressing (assess the amount of the dressing; the salad is to be tossed lightly without the ingredients overcome with the liquid, serve the salad with the remaining dressing on the side or keep it in the fridge for later.
  3. Season the salad with salt and pepper, then top with more fresh mint, and serve immediately.
