Chicken Cordon Bleu

2 medium skinless chicken breasts, (210 - 50 g each)
1/2 teaspoons season salt
4 - 6 slices swiss cheese, lactose-free
4 - 6 of thinly slice ham
1/2 cup almond flour
1/2 cup cassava flour
Spray oil to coat
1 large egg
2 teaspoon cassava flour
Preheat the oven at 350F (180C). Line the baking sheet with the parchment paper and spray rack on both sides.
Cut a pocket into each chicken breast, slightly flatten. Fold the cheese in half and place 2 pieces inside each pocket. Do the same with the ham. Close the pocket, seal with 2 toothpicks. Sprinkle season salt.
Breading & Dipping:
In a large square or oval bowl, whisk almond flour and cassava flour together.
In another large bowl, whisk egg and the 2-teaspoon cassava flour.
Dip chicken into egg mixture, then into the breading mixture. Transfer to prepared baking sheet, spray with oil.
Bake for 30 - 35 minutes, or until golden brown and just cooked through. Remove toothpicks, serve with your favourite sauce, and enjoy!
