Corn Beef Biscuits

Easy healthy gluten-free corn beef biscuits, perfect for a lunchtime snack.

Time:  20 minutes

Makes: 12 biscuits


1 pkg cheddar cheese biscuit mix – Duinkerken Foods

1/2 cup can corn beef

1 cup can coconut milk – Cha’s Organics

1/4 cup olive oil

1/3 cup dairy-free butter, melted


Preheat the oven to 425F (220C). Line the baking sheet with parchment paper or spray with non-stick cooking spray.

In a large bowl, add the biscuit mix and corn beef. Use a fork or your hands and mix until blended and crumbly.

Add the coconut milk and oil, and eggs, and mix until combined. Scoop dough into 12 portions onto the prepared baking sheet about 2 inches apart.

Add herb packet to melted butter. Brush onto biscuits. Bake for 20 – 25 minutes or until golden. Brush the remaining butter mixture on the biscuits and serve immediately.
